Often termed “sourdough”, these breads rarely taste sour. The flavor profile depends a great deal on the length of time that the dough is allowed to proof before it is baked. Our loaves only have naturally cultured yeast as their leavening agent.
Miga Rustica bread starts with four basic ingredients: organic flour, filtered water, sea salt, and our own cultured yeast. What makes this bread different from store bought bread? The use of minimal ingredients (that you can actually pronounce) and time. The dough making process begins a full 24 hours before this bread goes into the oven. This process cannot be rushed.
The levain is made from the “mother” or “starter” yeast culture. The time it takes for the yeast to reach its peak depends on a number of factors including temperature and the amount of flour and water used to feed it.
We do our best to use the highest percentage possible of sustainable grains. We always try to source our ingredients locally. In order to minimize food waste, our bread is baked to order. Due to the small-batch nature of our operation, quantities are limited.
